This tasty recipe is easy to make and a great way to use potatoes or fish leftovers. Ideal to share with family and friends.

400g of any type of fish
2 small onions, chopped
100ml of milk
2 tbsp of mayonnaise
1 egg, beaten
400g of potatoes
75g of sweetcorn
Handful of cheddar cheese
Salt to taste
Pepper to taste
Flour, for dusting
Olive oil, for frying
1. Cook the potatoes in boiling water until just tender. Drain well and mash the potatoes with a small knob of butter. Allow to cool.
2. Gently cook the fish, the onions and the milk.Allow to cool.
3. Drain the fish onions. Gently mix through the potatoes along with the sweetcorn, cheddar and mayonnaise. Add salt and peper to taste. Form into 6 - 8 patties.

5. Heat a large frying pan with a generous glug of olive oil. When the oil is hot, carefully lower the fish cakes into the pan. Cook for 5 - 7 minutes.
